Tasks & Responsibilities
1. Supervises and manages the Line Chefs (Chefs de Parties).
2. Oversees the preparation and service of food
3. Ensures all cooks have all necessary ingredients, equipment and recipes.
4. Ensures all food is consistently prepared and presented according to the established standards.
5. Ensures proper storage procedures, standardized recipes and waste control procedures are all
abided to by kitchen team members.
6. Manages the organization of kitchen, including organization and cleanliness of all the areas i.e.
dried storage, fridge, freezer, etc.
7. Assists in maintaining portion sizes and testing new recipes.
8. Conducts accurate and regular inventories.
9. Oversees the activities of the kitchen in the absence of the Central Kitchen Chef.
10. Assists in the development of the menu.
